ISO: Ideas on using these Spices/herbs

I ordered a bunch of stuff from The Spice House--not quite sure what to do with all of them, so thought I'd ask if anyone has TNT recipes that use any of these:

Ajowan seed
Annato seed
Charnushka (I'm thinking of using these dry roasted on bagels instead of poppy seeds...)
Mahleb
Epazote (salsa verde--but what else?)

I bought a bunch of other stuff, but I know/have recipes that use those things.

Charnushka seeds are great on rye bread. The best rye bread I ever had was at the Carnegie Deli in NYC - made with charnushka seeds in the crust.

Oh--that sounds good. I make rye bagels, so I could mix ? the dry roasted seeds instead of the caraway or were the seeds only on the crust and not throughout the bread?.

The seeds were only on the crust, and it was very well coated, so it would have been overkill to add them to the inside also. They're so good, nice and smoky with more intensity and depth than regular caraway or poppy or sesame, etc.
