Everyone that I know has a very personal method of roasting beef that they swear is the very best. I only make a roast a couple of times a year and I usually make it the way Mother made it on Sundays when she attended church and did not want the house to burn down. She wasn't that concerned about the house but, she did not want to inconvenience the firemen on Sunday! :ermm::ohmy::LOL:

Bring roast to room temperature,
Salt and pepper the roast, place on a rack in an open roasting pan and place in a preheated 375 degree oven for exactly one hour. Turn off the oven and do not open the door for any reason. After two hours turn the oven back on to 300 degrees and allow the roast to finish cooking. Rare 45 minutes, medium, 50 minutes, well done don't bother! this seems to work on any size roast, I have no idea why.

S & P the beasty, into a 500 F oven for 5 minutes, reduce temp to 200 F and cook for 1 hour per pound. Let rest for 15 minutes. Carve and serve.
