Is Kidney suet pretty much identical to lard. A guy at work brought his chili today and it was awesome. He gave me the recipe but it calls for kidney suet. I was thinking of replacing with lard but i have no idea if they are essentially the same thing. If not and if its going to make a big difference they how would i go about looking for it?

thanks,

If you were to render down beef kidney suet, you would have tallow. Lard is rendered pork kidney fat. So they are effectively the same thing, but from different animals. From a cooking perspective, I would say they are pretty much interchangeable.
