If you want to work in a bakery be sure to know all your measurements.Most bakeries weigh their ingredients so know the difference in ounzes,pounds,how many ounzes in a pound,how many in a 1/4 pound.Also know all your other measurement like a gallon is 16 cups,1/2 gallon is 8 cups,1 cup is 16 Tablespoons 1 tablespoon is 3 teaspoons and so on.They will be more likely to let you start baking if you know all this.Dont worry about knowing how to use a scale they will show that as some bakeries use electronic scales and some use weighted or spring scales.
Another thing dont be afraid to ask if your confused about something its better to ask then screw up a recipe.
