I purposely plan my meals to include leftovers or to turn into something else. I believe strongly in "cook once, eat twice."

Example, a pot roast gets turned into stroganoff or a bolognese sauce the next day. Food is very expensive here so I try and stretch my groceries. I made corned beef with cabbage last night which will also be Thursdays dinner. Tonight's meal will be something different. Splitting up leftovers with a new meal in between helps keep interest.
