Our main "meat" is chicken, but my boyfriend has a major liking for pork. Pork is really different for me. And chicken I always put mashed potatoes and spicy corn (corn with crushed red pepper, hot pepper flakes, and a bit of brown sugar...very tasty!).
Go to the chicken forum and just start looking at recipes. A lot of times there will be serving suggestions with them...well, sometimes anyway.
During these summer months utilize fresh vegetables. If you can grill your chicken you can grill a few veggies too. Just toss in a little extra virgin olive oil, kosher salt, and pepper and grill until tender. Make some linguine and then toss your veggies with the linguine and drizzle with a bit more olive oil and kosher salt. Or just serve the veggies on the side and toss your pasta with a bit of fresh basil leaves, olive oil, salt, and pepper. Go back to mashed potatoes this winter. Oh, I forgot, I love to shake some dried chili flakes on my pasta when I serve it just plain like this.
