During these summer months utilize fresh vegetables. If you can grill your chicken you can grill a few veggies too. Just toss in a little extra virgin olive oil, kosher salt, and pepper and grill until tender. Make some linguine and then toss your veggies with the linguine and drizzle with a bit more olive oil and kosher salt. Or just serve the veggies on the side and toss your pasta with a bit of fresh basil leaves, olive oil, salt, and pepper. Go back to mashed potatoes this winter. Oh, I forgot, I love to shake some dried chili flakes on my pasta when I serve it just plain like this.
