I'm pretty sure I have had this dish from the Cheesecake Factory, but I can't seem to retrieve a tongue memory of it, so I can't offer much in the way of duplicating it, except to say that maybe nine out of ten recipes use mirin, a sweetened rice wine, but other sugars such as honey can be used. I have an unconventional one that uses egg yolk.
You can google "dengaku." But "dengaku cheesecake" might generate some truly nasty-tasting recipes.
