More pancakes!

Hi there. New member here.
Just wondered if I coul use 00 pasta flour for pancakes? I'm trying to get them nice and fine and 00 is the smoothest flour in my cupboard at the moment. T

Good Morning ginger, do you mean the fluffy American pancake or the British pancake which is slightly thicker than the French crepe.
00 is a very strong flour full of gluten so if I was using it to make crepe or our pancake I would let the batter rest for a few hours, someone will give you advice on the fluffy ones.
I was married by a judge, I should have asked for a jury.
