I bought a bottle of organic ketchup about 4 years ago. I don't used it much so it has been in my fridge. It still smells and tastes great! What can be preserving it so well?

For the same reason that my no cook homemade BBQ sauce lasts forever in the fridge, just getting better over time. Cider vinegar, Kosher salt, ketchup, molasses, and spices is most of the mix. I make a big ice cream tub of it and it lasts for 2 years or more. I've never had to throw any out.
