Need a sauce for this chicken sandwich

Too many mayo suggestions. yuck
I'd do a pesto using cilantro, parsley, tequila, lime juice, salt, pepper, seeded jalapeno (roasted under the broiler until semi-charred), and fresh toasted/ground cumin seeds, and instead of oil I'd go with xanthan gum @ 0.1% by total mass.
Just put it all in a blender.
I guess that's more of a cilantro puree than a pesto but pesto sounds fancier on a sammich.

I can't use mayo because it's usually loaded with soy oil. Spreadable cream cheese works well in lots of sandwiches for me. I like the pesto idea and the roasted garlic.
I'm not supposed to have soy either, so I check. Hellman's mayo, at least here in Canada, is made with canola oil.
 
One of my favorite sandwiches to pack for a road trip is leftover grilled chicken tucked into a ww pita pocket with pesto and some pepper jack cheese.

1 cup Sour Cream
3 Tbs Lime juice
2 Tbs Soy sauce
2 Tbs Grated Cotijo (or Parmesan) cheese
1 Tbs turbanado sugar
1tsp granulated garlic
1 tsp granulated onion
¼ to ½ tsp Cayenne pepper
Salt and pepper to taste

Stir and Enjoy
