Seriously, make sure you have a lid or other thing nearby that will cover the entire pan . That will totally extiguish the flame should it get too high or should you get nervous.

If you want to practice ahead of time, try slicing up a bunch of mushrooms, sauteeing them in butter or evoo in a small skillet. Then flambee them with about 1/3-1/2 cup of brandy.

That way you can get used to doing it with a smaller pan and feel more comfortable when you make the larger entree recipe.
