Pork in Smoker

I want to make pork roasts in a smoker so it is pullable. I am going to use like 5 to 6 # roasts and the smker runs at like 200 - 225 degrees. How long will it take till it is pullable?

Lots of variables from weather and your ability to maintain temps in different conditions.

For 5-6 pounders, I think you can knock some time off of Andy's estimates. So 8 on the short end and perhaps 11 on the high. You want to cook them to about 190 internal temp if they're shoulder roasts.

Lots of people wrap the pork in foil after 4-6 hours and then raise the temp. The pork will have absorbed the smoke it can but the bark suffers in quality with this technique. Casual eaters won't notice though.
