I bought a beautiful bunch of chives at the Farmer's Market yesterday, got some eggs and cheddar cheese on sale, so I'm going to make a souffle from a recipe I found online. Here's my question since it has been years, if ever, since I've made a souffle. Do I need a special straight sided souffle baking dish? What else would work if I don't have one?

Any help would be greatly appreciated.:chef:

You can make a souffle in an almost straight sided dish, the straight helps the rise. Just remember not to grease the dish. My mom used to use an unglazed (but seasoned) flower pot. I have made individual souffles in cereal bowls (not quite straight) and they worked well.

i think this depends on volume of the dish. The ones I've used are a little under twice as wide as the height. As an example my 2 quart souffle dish is 8.75 (wide) x 5 in" (high).
