Burgers need a certain amount of fat for flavor and for texture. Most formulas call for a mix 80/20 or 85/15, lean meat to fat ratio. Interestingly, in Costa Rica where I live, beef is grass fed and is extremely lean. Mc Donalds buys local beef here but actually imports beef fat from from the US to mix into it to achieve a proper lean meat to fat ration. They use an 80/20 mix.
