I don't see any reason why rabbit wouldn't work in that type of recipe. When I can get rabbit, I make ... now, I'm going to slaughter this, but hausenpfeffer. I have several recipes for it, but a stew with lots of herbs and black pepper. But the first time I had rabbit, a French friend of mine (actually the mother of my childhood friend) prepared it much like coq au vin or bouef bourgoignion. All of these are recipes that take well to game; but in reality, most rabbit you buy is farm raised and doesn't need the treatments that are sort of hunters' stews. I did once have wild jack rabbit, and it was truly foul and tough.
