I was cleaning out some of the "boxes" of junk in the barn--I found a recipe I used to make a lot. I took a 6-week cooking class (one night/week) when I was in university. One of the dishes we made was manicotti using crepes...I found the recipes from that week. I would love to share the crepe recipe, but I can't give credit to whose recipe it was. BUT, a lot easier to make manicotti crepes than it is to stuff the tubes.
