Risi e Bisi

I haven't cooked much rissoto, although I'm familiar with technique. I'm planning on making risie bisi and am wondering what might be a good accompaniment? Any suggestions?

I bet a pan-fried chicken breast would go nicely. I would probably do some saute'd mushrooms too. There are lots of options!

keeping in mind there's only 30 or 40 million variations on the dish,,,,,

beef, pork, chicken and seafood pair well - depending on what you put in the rice dish.

the Italian kitchen, for example, would go up in smoke over cheese with seafood.
your mileage may vary (g)
