I haven't cooked much rissoto, although I'm familiar with technique. I'm planning on making risie bisi and am wondering what might be a good accompaniment? Any suggestions?
 
keeping in mind there's only 30 or 40 million variations on the dish,,,,,

beef, pork, chicken and seafood pair well - depending on what you put in the rice dish.

the Italian kitchen, for example, would go up in smoke over cheese with seafood.
