Looks wonderful! I've not had shark, would imagine it's fairly firm and dense.
 
It's delicious. The tenderness of it, depends on how you cook it. I had to be careful taking it out of the pan because it wants to break apart so easily. It has it's own taste. Some love it, some don't. Obviously, I do. :) You will have to try it one day!
 
Sharks "urinate" through their flesh and out through their skin. I would suggest that if you plan on eating it, soak it and rinse it several times first. I believe milk is recommended.
