Snack Ideas?

Our youngest is really into helping himself in the pantry now. I'd like to start making snacks that I can keep in there for him vs. always buying the prepackaged. Any ideas on snacks that can be kept in the pantry. Whats the shelf life for your ideas?

Dried fruits (figs, apricots, dates etc.) together with nuts of your choice are always tasty, satisfying, reasonably healthy and have decent shelf life.

Also homemade granola bars would be great, too

He's really not a picky eater. He'll reach for the fruits and veggies before meat though.
