Hi...sometimes when we cook fish and chips the fish will come out crisp but while waiting for more batches to come out of the fryer they become soggy staying warm in the oven...sometimes this doesnt happen so its not the batter...anyone have any ideas on how to keep it crispy???

maybe leave the oven door ajar so that moisture doesn't accumulate...

some fish types are wetter than others. make sure fish is dry before coating and frying. floour/egg/crumbs or batter.

I personally like shallow pan frying fish and chicken rather than deep frying. And I like cracker meal rather than bread crumbs etc. (although Panko crumbs can be great)

Don't put it in the oven period -- Or if you must, do so only for a very short period of time. The longer it's in the oven the higher the probability of it becoming soggy. ....If you are frying several batches, consider a larger frying vessel so you have less batches to fry...HTH

Fun!!!!

thank you all so very much....lots of good ideas..this was my first experience here and it was great..thanks again
