Thanks for the info Candocook, both sites were
interesting. I had the Food Ntwrk on while I was
doing something else and I heard Emeril say something
about using potato starch as opposed to corn starch
but I only caught the last of the conversation.

Arrgh!!! .... You're right Caine ... the site I got the info on soy flour from the other day was wrong! I just checked out a couple of other sites and then the analysis on NutritionData and it's closer to your results. Soy has 1/3 the carbs of cornstarch and 1/2 that of WW flour.
