I am trying to make some glazed mint leaves to go along with some chocolate truffles I am making. The only thing is, the recipie calls for powdered acacia (gum arabic) and none of the stores around here sell it, and I don't have the time to wait for some ordered online.
I have heard that you can substitute cream of tartar for gum arabic, but I can't find anything on the ratios, or if I even can.
Anyone have any info?
