Yay, another Nesco Roaster fan! It's probably the most used multitasker in my kitchen. I love being able to adjust the heat to everything from low simmer to high heat roasting. Canning I've never done though. I've been wanting to learn to do that, and it's good to know the nesco will do that too, with good results.

Try getting a cood slow cooker cookbook; The Slow Cooker Gourmet is one of my faves, also have the Italian Slow Cooker and The French Slow Cooker. America's Test Kitchen has The Slow Cooker Revolution. All pretty good.
