Using Parmesan Rind

Hello,

I make a ginger chicken soup that uses a parmesan rind in the broth for flavor. Does anyone know if/how many calories this might add to the soup? You remove the rind before eating.

I would think the calorie amount would be minimal. Just enjoy the nice flavor the rind gives.

i'm figuring the calories from the cheese would be nominal, & be mostly fat, so that would float. you can easily remove the fat layer from soups by removing the soup from the range & drawing layers of paper towel gently across its surface, or by refrigerating the soup & breaking/skimming the surface once solidified, as the fat rises to the surface of many a food.
