Make a bleu cheese dressing in which to dip fresh french fries (with the skins on). One of my all-time favorite ways to eat fries...and bleu cheese.

Is there a cheese the cat doesn't like?

I haven't found one yet our critters don't. They don't mind the trying though.

She will turn her nose up at Swiss. Of course she will insist on trying it out every single time! She loves Monterey Jack, but would like me to leave the jalapenos out.

Line a loose bottomed flan tin with pastry overlapping the rim, blind bake till cool.

In a pan sweat down sliced onions over a low heat for two hrs, keep the heat low and work in the cheese till you have a paste, smear the paste over the bottom of the pastry shell, beat eggs, cream and a touch of english mustard powder together and pour into shell, bake in a hot oven.

Then let it cool to luke warm, trim the rim, take out of flan tin.

The mixture will sink as it cools, so dont worry be happy its the best cheese and onion tart I know
