i like mine on steaks if it's a not-so-great cut of beef. it makes up in flavor for what the meat lacks in tenderness.
one of my favorite snacks is to steam some green beans and make a batch of hollaidaise and dip the hot beans into the warm sauce. it's soooooo delicious.

Eggs Benedict, generally with ham, bacon or pancetta. Never had it with anything else.

Could see it going rather well with asparagus, or perhaps some nicely roasted potatoes.

on an scrambled eggs w/ fried potatoes and chicken and green onions and cheese. i know sounds weird but very very good

Eggs Benedict,
only I don't really put it on top of it.
I always have it on the side so I don't use
as much. I love the stuff and could eat huge amounts
of it daily!

luvs, I'd rather have bearnaise sauce on a steak. The hollandaise on green beans sounds really good, though.

we had bearnaise at Ruth'sChris and the flavor just wasn't that great to me.
the green beans are really good with it. :P

It's lovely over artichokes!

Also over julienned crisped potatoes, and savory french toasts.

Any time a cream sauce is present, the food is irresistable!

I'd have to agree with you!
