My daughter belongs to a farm coop where she gets farm fresh vegetables weekly. Today she sent me the attached photo asking me to identify the light green squash in the photo.

Obviously the there are also zucchini and pattypan squash as well. I think the light green eggplant shaped ones are Opo squash. Here's a link Cook's Thesaurus: Asian Squash

What do you guys think?

I thought maybe a variety of chayote, but then again, maybe not. I haven't seen it either.

I'm pretty sure you are right about those being opo squash. I've seen them here sold under a different name (which I don't remember). I bought a tray of them once at the farmer's market but wasn't quite sure how to cook them. In the end, they went bad before I was able to use them.

Used in Indian and southern Asian cooking. (Not exclusively) ;) Also goes by Calabash and Lauki and bottle gourd.

They look very similar to what my mothers Italian family called (coo-coots-sa).

But the ones I remember where 3 times bigger. Giants actually.
They made it with tomatoes and ground beef. The they sprinkled grated cheese on top.
I really liked it and asked for it when I was in Tampa.
