Coming late to this party, but just wanted to add that another nice side dish for both elaborate & plain meats is the tiny rice-shaped pasta Orzo. Cooked just to the al dente stage, it's a nice change from the usual rice, & can be flavored any way you'd flavor regular pasta. I like to add chopped fresh herbs & a drizzle of extra-virgin olive oil or white truffle oil.
