If you want to cook like a Chinese restaurant cook, fine, you need a 100k btu burner. But if you want to cook like a Chinese home cook, your normal western stove will do a fine job. My Jenn-Air gas stove has a 14k btu burner and I make very good stir-fry.

I always felt that Asian homes would not have those hi btu blasters and the true home cooking would make do just as we do.
