Ingredients x people: 4 aubergines, 4 cloves garlic, 1 small bunch basil, 2 dessertspoons apple vinegar, half a glass of extra-virgin olive oil, salt, toasted bread slices.
Preparation: Wash the aubergine, cut into slices lengthwise, springle with salt and leave to drain. Meanwhile finely chop the basil and crush the garlic and mix to a sauce with oil, vinegar and salt. Rinse the aubergine slices, dry and grill for a few minutes on both sides. Remove from heat and mix them in a bowl with the basil sauce. Allow to rest for at least 10 hours in a cool place. Serve on slices of toasted bread.
