An Avocado gives this recipe an elusive almost buttery flavor that blends so well
with pasta.Prepare close to serving time so it doesn't brown. It takes little time if you use your FP. Put 4 oz. of parm cut in small pieces in the f/p then pulverize the cheese now put in the avocado 1 large,peeled and seeded. scrape the sides of the f/p bowl add 2 cup tightly packed fresh basil. and 2-3 cloves garlic then continue processing til the mixture is fairly smooth. With machine running add slowly 2/4 to 2/3 olive oil the more oil you add the thiner the sauce add to taste salt and fresh ground pepper put the sauce into a large serving bowl. toss your cooked pasta in the serving and toss with a big spoon and fork. This should serve 4-6 enjoy
