Braised Fresh Vegetables

This is a quick and delicious way to enjoy fresh vegies.,

Pour a can of chicken broth into a small/medium skillet, add a teaspoon or so of minced garlic and heat to simmering. Season with S&P to taste.
Add any combination of the following:
baby new potatoes, baby carrots, broccoli and/or cauliflower florets, sliced leeks or thinly sliced sweet onion rings, red sweet pepper strips, snow peas, asparagus tips, sliced zucchini...or anything you have on hand.
Cover and simmer until vegies are tender. Add a small handful of whatever fresh herbs you may have on hand. Italian parsley and sweet basil are very good choices. A good substitute or addition is Tone's Garlic/Herb Seasoning.
 
Constance, just so happens I'm doing that tonight with Swiss chard. :chef: I like to quickly saute the garlic and some fresh ginger in a little butter, then add the broth.
