I purchased some broad beans in an Asian market. Are they to be soaked overnight before cooking? Do they need to be shelled before cooking? Are they to be used as other legumes? Are they good in soups?

Sorry it took so long to answer this - young fava beans only need to be shelled. The older beans need the waxy coating removed - this can be done by blanching in boiling water for 1 minutes - plunge into an ice bath - pull off skins. Yes, they can be used in soups. The "net" is full of recipes - just get on google and type in

broad bean, soup

Quite a few!!
