Broiled Herbed Eggplant

2 medium eggplants, peeled
salt
1/2 c. butter
1/4 tsp. garlic juice
1 tsp. dried crushed basil
a few drops of Tabasco sauce

Cut peeled eggplant into 1/2 inch slices. Sprinkle a sheet of waxed paper with salt and dredge the eggplant in salt. Let set on paper towels about 30 minutes to draw out excess moisture (there's a lot of debate about this but I've always salted my eggplant). Rinse and then pat dry.

Meanwhile, blend together butter, garlic juice, basil and Tabasco. Spread over the peeled sliced eggplant slices. Broil about 5 minutes on each
side until golden brown.
