Eggplant with Apples, looking for recipe

Hi! I had a dish in a Spanish resturant in Italy. It was a baked dish of layered eggplant and apple with a little bit of very slightly sweetish tomato sauce. I have searched the net and here in vain. Does anyone know a recipe or could make one up? It was called Eggplant Pie in English but I don't think it was very descriptive. It wasn't sweet, just the natural flavors of Apple, eggplant and tomato. Thanks!
