Freezing Zucchini Question

Can I grate zuchinni and freeze it this way? I have a lot of zucchini to use up, I was thinking if I grated and froze some, I could defrost it and use it in bread recipes this winter. Anyone know if this will work? Also, should I add the frozen zucchini directly to my recipes or defrost it first? I'm afraid if I defrost it, I'll end up with a mushy mess.

Go for it, Toots. I've been freezing zucchini like this for years. You might have to drain it in a strainer before you use it in a recipe, though. I think it makes better zucchini bread after it's frozen.
 
We make stuffed zucchini boats for dinner during the summer (hamburger, rice, cheese, corn, onion, g. pepper and whatever other veggie odds and ends are around) and I was playing with the idea of how to freeze them for the winter. I'm happy to hear, katie, that you freeze it [zucchini] without much consequence. I also like the idea of grating and freezing rather than baking a ton of bread while it's hot outside and freezing that!
