We love this and make it often...You can use frozen and thawed artichokes or 2 6 oz. jars of marinated chokes drained. Slice a 11/2 lb. of mushrooms and saute with 1 cup of chopped yellow or white onions,and 2-3 crushed cloves of garlic in 1 tab. veggie oil, thaw 1- 10 oz pack of chopped frozen spinach. Beat 5 large eggs lightly and then mix with mushrooms,onions,spinach, artichokes and 1-1/2 cups sharp cheddar cheese bake in a buttered and covered cassarole at 350 for about 45 minutes..I sometimes use a good swiss in place of the cheddar and love it. WE like this with a green salad and the kids like a mixed fruit salad and fruit slush..
