Fun with frozen corn

Made a quick corn dish off the top of my head that turned out quite tasty.

Heat a large skillet with a bit of veg oil, add 2 cloves of minced garlic (or a good heaping teaspoon of minced from a jar) 2 cups or so of frozen corn and fry till just getting brown stirring regularly. Remove from heat, add half a red pepper diced, a good size handfull of coarse chopped baby spinach. A sqeeze of lemon & some S&P, quick stir until the spinach is wilted and serve.
We had it on the side of oven broiled pork chops with bacon marmalade and wild rice with and it went quite well.

Regular corn bread mix and then drain a can of corn into the food processor adn process it until its minced down well. Drain again and then add to the batter.

Mix well.

Drop by teaspoonfuls into hot oil and cook until browned nicely.
