Garlic Scape and Basil Pesto

Garlic Scape and Basil Pesto
1 Cup Chopped Garlic Scapes
1 Cup Fresh Chopped Basil
1 Cup Toasted Pine Nuts
1 Cup Grated Parmesan Cheese
1 Cup Olive Oil
Juice Of 1 Lemon
Salt and Pepper
Put the garlic scapes, basil, pine nuts, Parmesan, and lemon juice to your food processor and process until smooth. While the food processor is running drizzle the olive oil in until the the sauce comes together. Taste and season with salt and pepper to taste. Serve over your favorite pasta.
 
I wonder if you just pulsed garlic scapes now and froze in a bag with a little olive oil, if it would save until basil is ready for picking and making pesto later this summer. I can't get my basil to grow this year. Healthy plants, but they are only about 4-6 inches tall. About the same as when I planted them over a month ago. Too wet and not warm enough for them to take off yet I guess.

Sometimes I feel like I should be out in the garden with a sun lamp and a hot air hair blower. But then I again,I might short circuit myself. Sigh.
