I love yam fries! I've been trying loads of different things to make them nice and crispy, and none succeeded until I used this recipe:

I made this for Thanksgiving last year... YUMMMY


Sweet Potato Bake (Paula Deen)

3 cups peeled, cooked, mashed sweet potatoes or YAMS
1 cup sugar
1/3 cup melted butter
2 eggs
1 tsp vanilla
1 tsp cinnamon
1/2 tsp nutmeg
1/2 cup cream

Preheat your oven to 325.
Mix all the above except for the cream.
Beat with your electric mixer until very sooth.
Then you add the cream. Mix it up really well.
Pour all of it into a well greased baking dish.

Make topping...
1 cup brown sugar
1 cup chopped pecans
1/3 cup flour
3 tablespoons butter

Mix those all up and the sprinkle over your
sweet potato mixture.

Bake 25 - 30 minutes.
