Marinated Potato Salad with Bacon and Chives TNT

Boil as many potatoes as you need, til firm. Let cool, then peel ( I suppose you could peel them first, then boil). Slice potatoes thick, lay in a pan and sprinkle with cooked and crumbled bacon, and chopped chives. Repeat another layer or two.

Marinade:

Oil, white vinegar, dijon mustard, white pepper, lemon juice. Mix and baste onto salad.

Thanks Kadesma! Jkath, I let the potatoes sit til cooled to around room temperature, I served mine after I put the marinade on it. I didnot refrigerate it which is fine because the marinade does not have any mayo in it. Sizzlin, you should use any potatoe that will not turn mushy, you want the potatoes cooked but firm, I used red skinned potatoes (not the baby red skins).

thanks amber...........it souunds wonderful. I plan on serving it with Rainees Beer Marinated Grilled Steak this weekend.
