Mo's Scalloped Potatoes

Mo gave this to me and I highly recommend it. You can make it ahead and bake it when you need it. I had it in my recipe box so I copied it..that is why it is darker.

MO'S POTATOES ROMANOFF

8 med. Potatoes (quartered)
2 TBSP Butter
1 cup Sour Cream
4 Green Onions (chopped)
1 ¼ cups Cheddar Cheese (shredded)
1 tsp Salt
1/8 tsp Ground Black Pepper
1 tsp Paprika


Boil potatoes until tender. Mash with butter, sour cream, onions, ¾ cup cheese, salt and pepper. Turn mixture into buttered 1 ½ quart casserole. Sprinkle with remaining cheese and paprika.
Bake uncovered at 350 degrees F for 40 minutes.
