I could eat these at every meal! Very easy to make, but tastes like heaven!
Boil potatoes. Mash, adding enough sour cream to give it a good consistency (just to make it clear, do not use butter or anything else, just the sour cream). Add chives or finely chopped green onions (just the green part). Put in casserole that has been lightly oiled or sprayed with Pam. Bake at 350 degrees until heated through (about 20-30 minutes).
Note: If you use dried chives, you can add them to the sour cream and let them sit for awhile in the refregerator before using them. Sometimes I buy 2 cartons of sour cream--one for regular use, and one that I add chives to right away to have ready whenever I need it.
