This makes a lovely or with some fresh bread make a light lunch.Or just roast 6 peppersred,orange,yellow or you can buy already roasted peppers at the grocery but fresh roasted are a fresher flavor preheat oven to 425halve your peppers place them cut side down on a foil lined baking sheet.roast 25 min or skins blister cool then remove skins discard skins and then cut peppers into 1/2 inch strips transfer to a serving dish, Meanwhile for croutons in a large skillet heat 2 anchovies and 2 cloves minced garlic in hot1/4 cup evoo over med heat til garlic starts to brown add bread cubes 4 cups of i inch cubes cook 7-8 min cook til a light brown stir occasionally now sprinkle the croutons over our peppers top with 2oz of crumbled goat cheese sprinkle cheese with 1/2 cup of chopped fresh Italian parsley and finishing salt. This should serve 8
