Potato rösti with egg.

Hi.

I would like to make a kind of potato gratin or potato rösti with egg. Any ideas?
A Google search did not help me much. :chef:
 
Welcome to DC. Here are two that I make:

CWS’ Potato Pancakes

INGREDIENTS:


  • ¾ pound Yukon Gold potatoes
  • 1 large egg
  • ½ small fennel bulb
  • 3T AP flour
  • ¼-1/2 c duck fat
  • 3 sprigs fresh thyme leaves
  • 3 T EVOO
  • 2 tsp ground caraway seeds
  • S&P
Prepare ingredients:


  • Potatoes:peel and set aside in a bowl of water
  • Thyme: strip leaves from stems, divide into two containers
  • Fennel: grate
  • Caraway:grind
  • Egg: beat lightly
Start potato pancakes:


  • Grate potatoes.
  • Squeeze liquid from potatoes.
  • Heat skillet with 3 T duck fat over medium heat.
  • In a large mixing bowl, combine potatoes, fennel, caraway, ¼ cup flour, beaten egg, thyme leaves, salt and pepper.
  • Using a 2/3cup measuring cup to drop potatoes in skillet, flatten with bottom of measuring cup.
  • Cook for 5-8minutes each side until golden.
  • Set aside,cover with foil to keep warm.
CWS’ Potato Torte
Ingredients:

· 1 lb. Yukon gold potatoes
· 2 T whipping cream
· 1 large egg
· 2 oz. gouda cheese
· 1 T unsalted butter
· 1/2 cup mixed mushrooms ~ oyster, portobello, cremini, shiitake etc.
· 1 T canola oil
butter (1 tsp)


Preheat oven to 400F. Coat a 9-inch pie dish with butter.
. Prepare ingredients:
· Mushrooms: slice thinly
· Eggs: beat lightly
· Gouda cheese: grate
· Potatoes: grate and squeeze thoroughly with paper towel to remove all moisture

Directions:

  • Heat the canola oil in a frying pan over medium heat.
  • Add mushrooms and cook until soft and well-browned, season to taste and set aside.
  • Place grated potatoes in a bowl. Add cheese, cream, butter, egg and mushrooms. Stir.
  • Pour into the buttered pie dish.
  • Place in oven and bake,uncovered for about 45 minutes (until the top is crisp and bubbly.)

You're welcome. The potato pancakes can be "fried" in oil if you don't have duck fat (the duck fat really makes the difference, IMO. The crispiness on the outside, with the inside being soft...). When I lived in Germany, we often used goose fat. The fennel is a recent addition, but I've also made them with grated apple. Sometimes I roast the caraway first and then grind it. But, you can put the whole seeds in--in my house, people don't like the whole seeds, hence, the reason I grind them. You can use any kind of cheese for the "potato pie" or leave the cheese out. I like to use smoked gouda when I can find it. You can also add smoked fish to it if you like. You can also cook that mixture like potato pancakes.
