Potato-stuffed red bell peppers on the grill

Just saw this in a mag, and Constances stuffed tomatoes reminded me of it - it looks awesome! Hubbie has the mag at work, so I don't have the exact measurements -

Red bell peppers, halved lengthwise, seeds scooped out
Mashed potatoes of your choice - I'm thinking garlic, chives and cheese!

Stuff the peppers with the mashed taters, oil the bottoms of the peppers, and place on grill til pepper starts to 'roast' and the potatoes are heated up.
 
This is another one of those "*doh!*, why didn't I think of that?" recipes. (Kind of like the baked potatoes stuffed with scrambled eggs last week.)

LOL at the 'duh' - that's exactly what I thought! It's the smack yourself on the forehead saying, 'wow -I could have had a V-8'!
 
I have lots of leftover mashed potatoes... I wonder if I can get Paulie to stop at the store to buy some red peppers. What a great sounding dinner. !!!
 
Now I'm really wanting to make the recipe - my grocery store has the biggest beautiful red bell peppers on sale 10 for $10! Woo-Hoo!!!
 
That's a good price, Jkath. Last winter I was paying $1.79 ea for them.
I should have some from my garden soon. As much as I love mashed potatoes, I think this would be wonderful!
Can't wait to see the whole recipe.
