Raggmunk, Swedish potato pancakes.
Raggmunk: 4 portion
200 ml plain flour
500 ml milk
700 gram potatoes
1 1/2 teaspoon salt.
Whisk flour, milk, egg and salt to a smooth batter. Peel the potatoes and place in cold water not to darken, now take on potatoes and finely grate it directly into the batter, stir and coat the potatoes and repeat until all potatoes are done.
Add a knob of butter to frying pan, heat up and fry about 100 ml batter and until golden brown.
Served with fried salted pork or unsmoked bacon or smoked bacon and a big dollop of lingon jam or cranberry sauce.
