This time of year I get really excited about the great wild ingredients that can be foraged in my area. Favorites of mine are morels, fiddleheads, and ramps. I've been enjoying the fiddleheads and morels for some time now, but have only been getting into ramps for the last two years. I mostly just saute them, but am looking and asking for other ideas and feedback from other ramp enthusiasts. I 'd very much like to hear your recipes or ideas. Thanks!
 
Well - they are great cooked in with bacon, or pancetta - or even used in eggs.
Chopped fresh and used in a salad - or soups - they offer that unique ramp sort of onion crossed with garlic flavor.
