Ratatouille Variation

The supermarket didn't have any eggplants so I improvised and was really happy with the results. Maybe one of the best vegetable dishes i have made on the grill.

2 yellow onions halved crosswise skin on.
4 Roma tomatoes halved crosswise
4 cloves garlic chopped
3-4 tbsp oilve oil
4 Zuccini sliced lengthwise
2 heads baby bok choy (I think celery would be a good substitute)

Start your grill and place the onions on skin side down.
Place the tomatoes in a loaf pan (I used a disposable tin one).
Sprinkle with the garlic and drizzle with the Olive oil the place on grill.
Halve the squash and drizzle with oil then season with S&P.
Remove the green part of the bok choy and drizzle with a little Olive oil.
Grill everything until done. The tomatoes should be soft and the onions too.
Dice and toss everything together.Adjust S&P if needed.

This was great on bread like a bruschetta or just as is.

i love bok choy but have never grilled it before.

btw, maybe i'm reading it wrong, but did you say that you grill the green parts, or just the whites?
 
I actually grilled the bok choy whole and the green parts burned too much so i didn't add them. I will add eggplant next time too. The kids even ate this dish and liked it!
